Since I started learning the about five mother sauces in culinary school I’ve been the most excited to try out hollandaise. I love eggs benedict!!! I’ve only ever had a single memorable EB (which was in Park Slope, Brooklyn a few years back). I decided to recreate this dish on Saturday adding my own touches. After taking a bite I was transported back to that spot in Park Slope. I think that was a job well done. (SFK)
